Baked Mexican Tilapia

Today’s goal for my Healthy Holidays Challenge is to share a recipe that uses 5 ingredients or less!

Ingredients

  • 1 Head Cauliflower
  • 6-10 Tilapia Filets
  • 1 Jar Salsa
  • 3 Red Peppers

Directions

  1. Preheat oven to 350 degrees.
  2. Place the tilapia filets in a 9×13 pan.
  3. Slice Red peppers and lay over tilapia filets.
  4. Pour and spread the salsa over the tilapia and peppers.  Make sure it is completely covered.  Use as much as desired.
  5. Place in the over for 25-30 minutes, until tilapia flakes easily with a fork.
  6. In the meantime, use the cauliflower to make Paleo Cauliflower Rice.
  7. When the fish is done, serve over a cup of steam cauliflower rice.

You can change the flavor of this dish by using different salsas such as regular, pineapple, tomatillo, or black bean (pictured).  You can even change it to an Italian dish by using pasta sauce.  You can also change up the vegetable but I find the peppers work great with the salsa.  You can see I used cherry tomatoes in the photo.  The options are endless!  Enjoy!
