Boat Load of Veggies

First off, happy birthday to my hubby!  He turns 28 today!  We ate his cake early because we weren’t sure it would last.  It was a cannoli cake and had ricotta in it.  Yum!

I have bad news for me though.  I got sick on Friday!  I know what it is and hopefully it will be gone within a couple of days.  Too complicated to explain but what caused it is gone now so hopefully my body will rebound quickly.  So that means Saturday, I spent my entire day on the couch.  I was almost proud of my 1200 steps for the day.  Haha!  But seriously, I need to train!!!  I revamped my marathon plan and I still have enough time to train since my base mileage is high enough but all this injury and sickness is making me nervous…

Anyway, Sunday, we did our grocery shopping and prepped for a friend who stayed over for the night.  We hit the produce outlet which I mention all the time.  Just to give you an idea, for $30.75, I got…

  • 4 lbs Tomatoes
  • 2 lbs Grapes
  • 2 lbs Kale
  • 1 lb Basil
  • 1 lb Cilantro
  • 3 lbs Broccoli
  • 5 Lemons
  • 7 Oranges
  • 5 Grapefruit
  • 4 lbs Bananas
  • 1 Head Savoy Cabbage
  • 1 Head Cauliflower
  • 2 lbs Snap Peas
  • 3 lbs Kirby Cucumbers
  • 1 Stalk Celery
  • 1 lb Radishes

DSCN6078 (800x600)I will be well fed this week!  So we started off our fabulous cooking with homemade ravioli.  We found ravioli cutters at TJ Maxx and Rob was so excited.  We decided to get to work.  They weren’t too hard to make but we had to use thick pasta (homemade of course).  We will get better at it though! 

DSCN6081 (800x600)They were stuffed with fresh ground pork (ground in our hand grinder from pork chops), ricotta, mozzarella, eggs, and savoy cabbage.  You couldn’t taste the cabbage at all, it just gave it an occasional crunch (and added fiber!).  We also made the tomato sauce from scratch.  It was my first attempt ever!  A little too sweet but it was pretty darn good for first time!  This dinner was amazing!!!!

It was a little time consuming but I really can’t understand why people stopped cooking this way.  It tasted better than anything I’ve ever bought and possibly better than a restaurant too.  I can’t wait to make ravioli again!

Now I have to be off to make Rob’s second birthday cake (he is so spoiled but he is helping me make it, lol).  It is his day so whatever he wants to do today goes!

  1. Woohoo! I’ve never made pasta but my mother makes it — just the plain ones, nothing stuffed.

    Those freggies look GREAT! Lots of prep work but all so wonderful!

    All that produce looks good! I have to hit the Produce Junction soon…having some withdrawals…ShopRite just isn’t cutting it lately! Ravioli looks good, too! Not Paleo, so I won’t be copying…I do have a pasta and ravioli maker, so maybe I’ll have to investigate some Paleo recipes…we’ll see…I’ll keep you posted!
    Feel better! I’ve got some kind of something, little bit of a runny nose, and NO VOICE!!!! Makes yelling at my kids difficult… 😉 and should be interesting teaching tomorrow!!!

  3. Sign me up! With that grocery haul when can I be the next house guest? Looks amazing! Plus the pasta sounds/looks great! We just got a pasta maker too, can’t wait to use it. (Sadly, you just reminded me about it… oops, haha)
