Breakfast Made Easy – Food Blog 12/14

I didn’t go for my run!  I know, I should have just done it in the morning.  What happened was that I was feeling rather useless on campus and I decided I would surprise Rob a day early and go home.  So instead of running later in the afternoon, I drove 2 hours to be with my hubs!  The plan was to make this morning’s run longer but that is a story for tomorrow’s blog…

On to the food blog!

Breakfast  (570 Calories)

DSCN5789 (600x800)Today, we will learn how easy it is to make breakfast.  Every morning, I start off with an omelet and oatmeal.  First, I start my oatmeal. Today’s would take longer because its steel cut oats. Just an FYI, Bob’s Red Mill Steel Cut oats only take 10-20 minutes. The ones I used here were 20-25. Ugh! So I started them. At about half way through, I tossed in a diced apple and cinnamon.

DSCN5784 (600x800)After I start the oatmeal, I move on to my omelet.  I use 2 whole eggs because all the wonderful nutrients of the egg are in the yolk (I’ve written a blog about this, I might need to again!).  I coat my pan with a thin layer of oil using a hand pumped oil sprayer (got mine at Walmart!) and I toss in some mushrooms and spinach.  I let it heat slightly and then pour my egg and milk mixture over top.

DSCN5786 (600x800)At this point, its time to stir the oatmeal and I also made my coffee (In my new Cuisinart single cup coffee maker from Rob for Christmas!!! – yes we are impatient and exchanged early!)  By the time I’m done making my coffee, its time to flip the eggs.  They cook much faster once you flip them.  I add some cheese at this point so it has time to melt; I fold it in half before serving.  By the time they are done and I finish eating my omelet, the oatmeal is ready and I can have the second half of my breakfast!  I packed my oatmeal in a to-go container so I could leave for campus and eat it while I blogged Smile

Lunch  (334 Calories)

Surprise Surprise, it’s a salad!  I’m so glad I don’t have to have another salad today!

Snacks  (509 Calories)

This time, I had a super late breakfast and then go wrapped up with professors and then packing so no morning snacks but luckily didn’t get hungry either.  I had a mini bagel with whipped cream cheese while I packed.  In the car, I wasn’t that hungry but made sure to leave some easy access snacks on the car seat.  Annie’s Whole Wheat Bunnies and some carrots.  I munched on a few but wasn’t really hungry.

DSCN5796 (600x800)I also stopped for a peppermint mocha at Dunkin Donuts.  OMG it was just what I wanted.  Then later, I found out it was like 190 calories.  Oh well!  It was totally worth it.  Helped me stay awake too!  It really was exactly what I was craving.

Dinner (541 Calories)

Dinner was rushed since I surprised Rob.  We got pizza from a local place.  I wasn’t feeling the broccoli or mushrooms so I just got tomatoes.  I also have some more of this later in the evening when I was hungry again and wanted a snack.  For dessert, I made Rob and I hot chocolate with milk, cocoa powder, and sugar.  Yum!

Much better foods today!  Overall, ended up at just under 2000 calories.  Pretty good!  I try to keep it between 1700 and 2000.  That is pretty much my maintenance range but now that my marathon training will start ramping up, maybe it will turn into loss range!!!  We’ll see!  I will eat more on Fridays though, the day before my long runs.  I don’t want to burn out because I was hungry or lacking energy.

Today’s agenda consists of last minute Christmas shopping (Actually my only Christmas shopping!).  I only have a few things to get and then I’m done!  I’m hoping the stores won’t be too crazy since people should be at work, right??

  1. Have a great weekend at home! Actually, you’re home for winter break, aren’t you…well, enjoy!
    I have just a few more things to get for gifts…the bulk of it is done…now…if I could just finish cleaning the house and wrap up the last bit of decorating we’ll be all set!!!

    1. I hear you on the cleaning! I leave Rob alone for a week and a half! Haha! Actually, its a lot of just clutter and the bomb that went off from shopping yesterday. Oy!
