Today’s goal for my Healthy Holidays Challenge is to share a recipe that uses 5 ingredients or less!

Paleo Cauliflower Rice

Today’s dinner was perfectly Paleo!  I was really craving tacos but knew that the traditional type wasn’t on the health food list for this challenge.  Beef over a bed of lettuce wasn’t sounding that appealing though.  Then I remembered Paleo Cauliflower Rice.

Start with a head of lettuce and get your food processor out.  Cut up your cauliflower in manageable pieces and pulse in

Recipe Interwebs

With my new motivation for a stricter diet (weight loss, more energy, better digestion, etc.), I was at a bit of a loss for some new recipes. I really, really want to be more Paleo (like a 5th Shade of Paleo), so it was an even bigger challenge for me. First, I bought this HUGE container of lettuce at BJs Wholesale. Now, I sit, and

Saint Louis Day 2: Race Expo

Saturday, we got up nice and early so we could get our day started.  Actually, we tried sleeping in until 7 but with our bodies on East Coast time, we were up at 6 (which is really 7 to us).  We really liked out hotel but were bummed when we realized it didn’t include breakfast.  I had thought I had booked a hotel that had

Paleo Lasagna

I have to admit, this wasn’t my recipe. But then again, I never do follow recipes. This one was so easy though, it was hard not to actually follow it. First, off I had these beautiful eggplant that my sister gave me from the family’s garden. Instantly, I thought “Lasagna!” but was then stumped as to handling the eggplant. I found a simple

Sick But Stress Free

Friday was a pretty busy day.  I had work to do plus other errands and such all day.  That night, I had friends over for a 31 Party (which is still open for orders by the way if you want anything!).  I absolutely love all their totes, purses, and organizers.

I tried my best to keep all the food relatively healthy.  I even revamped

Food Fridays: Lamb, Chicken, & Okra

This week, I had my nice camera with me which makes for excellent food photos!

First, that lovely Lamb Roast we made on Sunday.  It was on clearance sale at the store so we picked it up and made it for us and my parents.  Simple enough, I just inserted some garlic into it and covered it in herb butter (store bought).  Then

Friday Wrapup

I’m in a strange mood this morning! Things are just cracking me up! Could be that I was just sitting here flipping through my friend Esther’s Pinterest Funny Stuffs Board. I don’t know why (probably the mental image), but this one had me laughing out loud:

Ah man, I’m done with that now. My abs hurt too much for laughing! From all that P90X!!! YEAH!
