Delicious Eats: Breakfast Muffins, Italian Chicken and Broccoli, & Cauliflower Beef Stew

This week, I did my meal planning backwards.  I noticed on my way to school that my favorite farm stand had just opened.  I stopped in and got whatever looked delicious.

Then I based my meals around what I had bought.  Of course, I have leftover stuff but it will last til next week.  So, I haven’t cooked since Monday and its been wonderful!  I don’t mind eating the same thing every day as long as it is a good meal.  I spent a few hours in the kitchen on Monday and then a bit on Tuesday also and have been eating well since!

First off, I made breakfast muffins.

  • 10 Eggs
  • 2 tablespoons Coconut Flour
  • Seasoning (to taste)
  • Veggies
  • Butter

I tried buttering the pan but they still stuck.  Next time, I am just baking the silly things in cupcake sleeves!  They weren’t as good this week (no bacon).  Next week, I plan on cooking the bacon and then chopping it up and putting it in the muffins.  This way, all the grease cooks off and I still get that delicious flavor!  Hey, maybe I can use the bacon fat to grease the pan?  LoL.  I also made homefries to go with my muffins and its been a great breakfast every day!

Monday night, I also made up a sort of Italian Chicken dish.  It was pretty good but needed better seasoning:

  • Chicken
  • Broccoli Slaw
  • Tomatoes
  • Olive Oil
  • Seasoning (to taste)
I just cooked up the chicken with some olive oil and threw in the tomatoes to cook into a sauce too.  I then sauteed the broccoli slaw and combined everything in Ball jars.  I take the jar to work, microwave it in the glass, and then dump it onto a plate to eat!  

I also made guacamole (avocado, tomatoes, salt, lemon) and sliced cucumbers for dipping.  Quick easy snack!

I put off my last meal for Tuesday since I wanted to make it in the Crock Pot but I still didn’t let it cook long enough.  It was much better the second day.  I tried to make a beef stew with celery and cauliflower (plus water, coconut flour, and seasoning).  Not bad.

That’s it!  I didn’t use any recipes this week and if you have questions about how I cooked anything, just ask!

  1. I want to eat all your homefries!! NOM! And the beef stew + cauliflower? Never thought of that before…that’s brilliant! I think it’s hilarious that we both ended up making breakfast muffins this week. *lmao* It’s so quick and easy in the morning. I *love* it! Can’t wait to remake my recipe this weekend with some more flavoring (and more bacon! *lol*).

  2. I love broccoli slaw! It seems to be the only broccoli that I can get away with (stoopid gut) and it doesn’t exactly make sense but I’m not a chemist…

    Basically, you’re making mini-frittatas? Cool!

    We always used (that were “me”) bacon grease to dress pans and stick in boiling veg BUT our bacon was from our hogs (who ate things like our chicken heads…) and they were minimally processed what-with being done by…us! I truly think the healthier the animal it comes from, the healthier the product, even if smoked and salt cured.

    1. Good point. I do buy Nitrate free bacon but its still not super healthy! I like the Applegate Farms bacon from BJs but I haven’t shopped there in a while!

I have an article somewhere that actually touts the health benefits of bacon…It’s from a nutritionist, I’ll have to find it and send you the link…basically, Lily is correct, the healthier the hog, the better the meat (same goes for grass-fed beef) and the curing of it w/o nitrates has some benefit that I can’t remember…hubs would remember, if it has to do with bacon, it’s locked in the vault of his brain!!!

    1. Yes! I am *so* over salads right now. Sick of them. One dish wonders are my other go to. These worked great! Have to think of something for next week 🙂
