Meal Planning with One Pot

I feel like the holidays are finally over.  I took the weekend to rest and recover a bit from the long semester and then the Christmas craziness but now it is time to get back to business. 

Last night, I dug out all of my best cookbooks and since Rob is the picky eater in the house, I told him to pick 5 recipes for me to make this week.  We had quite the selection of cookbooks but I decided to try one that I have been dying to use.

I got this a while back and was really bummed when I saw it at BJs this week for a cheaper price (hint hint – go get yourself a copy!).  It has a recipe for every day of the year and is supposed to only use one pot to make it (sometimes they also use a slow cooker too).  I love not having to use a lot of pots so this was perfect for me.  What I really love about this book though is that almost all of the recipes are complete meals.  I didn’t need a cook book of 365 side dishes.  I am really excited to try some of these recipes!

I took out my phone to make my grocery list, and wow do I need to buy a lot of ingredients.  I used my favorite app GrocerySmart to build my shopping list (I just found out my grocery store has an app too but I keep forgetting to use it).  I really like GrocerySmart though so I don’t know if I’ll ever switch!

That is it so far.  The plan today is to have breakfast with my sister, run some errands with her, and go grocery shopping.  I think I will hit the gym this afternoon with Rob since his lifting buddy has been working late a lot. 

Anyway, I really love cooking so this week should be fun and get me back into the habit of making fun dishes.  It is so annoying during the semester that I have to pack mostly cold foods and I have to do all my cooking on Sundays.  I wish I had more time during the week to prepare fresh meals Sad smile  It is what it is though and I’m going to enjoy it this week!

  1. have fun shopping! That stinks that most of your meals have to be cold, at least at the hospital we have a microwave. Can’t wait to start the new year off right with you 🙂

  2. There are some good thermos containers that will keep things warm for several hours…maybe one of those would be helpful? Soups especially stay hot – think less air to cool and keep the insulation warm…things like homemade chicken nuggets, don’t stay so warm…or so the kids tell me! I’ll have to check to see if Costco has that book. I tend to make a lot of one pot meals and now that I have a new really deep covered cast iron one I’m loving making one pot meals!
