Paleo Bread

I got it in my head a few days ago that I wanted to try making the Paleo bread recipe I had seen on Carrots N Cake.  The recipe wasn’t from her but from Elana’s Pantry (click for recipe).  I tossed around the different recipes she had but finally settled on the one recommended by CNC.  First, I had to the hit the heath food store for odd ingredients like Almond and Coconut Flours.

DSC_0345-2Let me tell you, almond flour is expensive so I don’t think I’ll be using it often (or making this bread ever again since it used almost the whole bag!).  Anyway, so it was pretty easy.  You use a food processor.  My batter almost didn’t fit when I needed to add the wet ingredients but I managed to make it work.

DSC_0353The bread actually came out pretty well!  It didn’t rise as much as I thought (I even used the smaller bread pan as instructed in the recipe).  It reminds me more of a dry banana bread texture than a yeast bread.  It was fun making it though!  Last night I tried it with some Irish butter and today I made eggs and put it on top.  Definitely delicious!

I have to say though that I kind of knew I wouldn’t be that excited.  I mean, I really don’t miss bread.  I do like having something to eat my eggs with but really, I don’t need bread every day.  And when I do eat bread, I’d rather it be the real deal.  So while this was fun and delicious, I don’t need it.  More of a fun time baking.  I kind of saw this happening since I used to wonder why people made replacements for things.  The whole point of Paleo is to eat like your ancestors and they weren’t baking Paleo bread.  But then again, I understand that if you really want something bread-like and you really can’t have any grains, then this is what you have!  It’s just not going to be a regular occurrence for me but I recommend the recipe if you are looking for something.


On another note, I took this cute photo this morning on my porch.  I just loved how the dew was just sitting there!

  2. It may be cheaper for you to make your own (from raw almonds) in the food processor BUT it takes a long time and you have to be sure to no make almond butter ;p

Trader Joes almond meal isn’t too expensive…it’s the least expensive I’ve found…I did make a coconut flour bread way back when, it was very dense and dry – was good toasted and buttered…and like you said, not for everyday use. I don’t miss it either. In fact, a coworker had mentioned one Friday that she was going to make her kids BLT’s for supper since her hubs wasn’t home…so I got it stuck in my head that I wanted the same…so I went out on a limb and bought iceberg lettuce and used that as the bread…it wrapped more easily than a leaf of romaine…kids LOVED it!

    1. I’ve found that I prefer burgers lettuce wrapped too. Go figure, cut it out and learn that you don’t actually like bread that much!

  4. yea for making paleo bread! It looks delicious. I am REALLY trying to limit my bread intake. Most of mine are 1/2 a bagel thin and only 50 calories. Which I know aren’t paleo, but they are quick and easy. I love almond flour, but MAN that stuff is so expensive. I know you can get it cheaper online though as well. And I agree with you and tiffany, when I have a burger, I use lettuce or even a pepper on top to hold on to 🙂
