Paleo Lasagna & Chicken Cacciatore

I have to admit, this wasn’t my recipe.  But then again, I never do follow recipes.  This one was so easy though, it was hard not to actually follow it.  First, off I had these beautiful eggplant that my sister gave me from the family’s garden.  Instantly, I thought “Lasagna!” but was then stumped as to handling the eggplant.  I found a simple recipe from Paleo Fresh that told you how to prep the eggplant.  From there, I just browned the meat (I used ground turkey), added sauce, and threw it all in the oven.  It was amazing!

It was also very filling.  I ate this for “lunch” at 10 AM yesterday, had an apple around 2PM (for the carbs), and I wasn’t hungry again until after I got home from my class after 4 PM!  So basically, one serving of lasagna and a large apple held me over for 6+ hours!  This has been one major bonus of being Paleo!



Chicken Cacciatore

To me, “chicken cacciatore” is just chicken with pasta sauce and veggies, so any time I make something fitting that description, that is what I call it!  So I had more pasta sauce left and lots of veggies including more eggplant, zucchini, red peppers, and tomatoes.  So, I cooked the chicken first in a pan with some sauce.

While that was cooking, I diced all my veggies to about the same size and mixed them together in my pans (by the way, I really need a 9×13, lol)

I had WAY too many veggies but I made it work.  After I mixed in the cooked chicken and the rest of the sauce, I covered them with foil and put them in the oven at 400 degrees for about 30 minutes.  (Originally I did 20 minutes but the eggplant was a little undercooked).  The cook time might need some more trial and error but this was also delicious!  I have 3 more servings of it and 1 more of the lasagna which means I don’t have to cook until Friday!  Yeah!

I did not want to work out this morning!  I had almost determined not to but then I randomly grabbed my workout clothes to get dressed, like I wasn’t even thinking.  And by the time I was fully dressed, I was kind of amped up for a run!  Imagine that!  Total mood turn around in less than 2 minutes.  It was a very sweaty run.  My hips hurt the most but I made sure not to “roll” them so I don’t injure myself.  Overall, not a bad run for not being fully recovered yet!

So I decided to check the weather when I got back because I was so sweaty…

Seriously???  I thought 100% humidity meant it was raining out!  I am SO glad it was only 2 miles.

Anyway, time to get some work done.  I have a super long, blank day (no classes or meetings).  That means I have to keep myself motivated and the computer is the #1 drain on energy for me.  Have a great Wednesday!

  1. We have 100% humidity “all the time” (living at the confluence of the two largest rivers in the US and directly fed fronts from the Gulf of Mexico…). When friends from other parts of the country come visit, they say, “It’s like you live in an aquarium.” Of course, our past 2 years of hellish drought gave us some of that 30% humidity they’re used to!

    I never need motivation to workout — but I’m not running a marathon. Not eating insanely is my worry. After my outpatient thing on Friday, I only missed working out within the 24 hour period when I was unconscious. I haven’t worked out as HARD but I lose my mind if I don’t move (being chained to a desk at work or in my car seat during those commutes)!

  2. Yessss, I’ve been looking for a good paleo lasagna recipe, thanks for sharing this one! 100% humidity in October is craziness, I live in the Midwest & thought it was bad here sometimes! As for workout motivation—just thinking about how good I’ll feel once it’s D-O-N-E!
