Ricotta Stuffed Chicken

Tonight, a friend was coming over to hang out so I decided to cook something nice.  This is the simplest recipe ever.  The whole meal had only 5 ingredients, one of which was a side of veggies!  So simple…

Ricotta Stuffed Chicken
Ingredients:
1 cup chopped spinach
1/2 cup (or so, didn’t measure) Low Fat Ricotta Cheese
3 Chicken Breasts (about 3-4oz each)

Chop spinach and mix with ricotta.  Tenderize chicken and flatten out.  Stuff chicken with ricotta/spinach mixture and roll or fold breasts in half to cover filling.

Heat 1 tablespoon olive oil in pan on medium heat.  Lightly flour chicken breasts and place in hot pan.

 Cover with lid.  Cook through, turning once.

Serve with your choice of side, spoon extra cheese/olive oil mixture on top of chicken.
284 calories, 5g carbs, 13g fat, 36g protein.

This was possibly one of the most delicious things I’ve ever made!  Even the hubby approved and he is one picky eater!  Can’t wait to make it again… Come to think of it… I have more ricotta and spinach…  😛

We also had dessert! 
 

Rob thought these looked delicious at the store and they disappointed slightly but were still a good sweet snack.  It left something to be desired when thinking “cheesecake” though!  But still, at only 150 calories, maybe its a good replacement for some people?  Also, the raspberry were much better than the strawberry in my opinion!  A nice little snack for the end of the night though!
