WIAW: Pumpkin Time!

Since I’ve been slacking at blog posts lately, I thought I would make it a bit more fun for myself and do some typical blogger posts.  Welcome to What I Ate Wednesday!  This will just include recipes or yummy foods I’ve been having as of late.

Pumpkin Everything

I’m not obsessed with pumpkin like the rest of America seems to be.  I just made some pumpkin muffins and then needed to use up the rest of the can so I had to get creative.

I didn’t really like the texture of the pumpkin pancakes.  They tasted great but were a little runny and made it difficult to cook more than one (they would run into each other) and to flip.  I will work on a modified recipe the next time I open a can of pumpkin!

Eating My Way Through Philly

It’s no surprise I spend lots of time in Philadelphia for school.  We were downtown this weekend and stopped at our favorite bar, The Bards, after our rugby game (they sponsored us for a few years).  They have a burger with “Bacon Jam”

Yes, bacon jam is as amazing as it sounds.  I used to always get the homemade Irish Stew.  I feel so guilty now wanting a burger every time I go there!  And who doesn’t like sweet potato fries?

Yesterday, I wasn’t feeling so hot and decided I would try to stick to mostly liquids for the day.  I have been eyeballing this place near campus called Vegetate for a while now, but knew it was Vegetarian  (and I center most meals around an animal protein).  When I wanted a smoothie for lunch yesterday though, I decided to check it out and was pleasantly surprised!  Lots of dairy options for the protein so it is a viable place for me, especially for snacks.  I got this awesome Strawberry Mango Kale Yogurt smoothie.  I asked for almond butter too but they were out.  I definitely plan on going back!

Last week, I was crunched for time and stuck in the train station.  There is an Au Bon Pan and their new “Petit” meals were on sale, 2 for $5 so I picked them up.

I forget the name but the first one had Chicken, Chickpeas, Pesto, and Salsa over Arugula.  The second was just cheese, crackers, and grapes like you see.  They are supposed to be smaller meals or snacks.  Definitely a great option when you are hungry and don’t want a whole meal.  Be careful though!  I noticed one of the packs still had like 500 calories in it.  That would be a full meal for me!  Even though it looked like snack-y foods.  This was basically dinner that night.  Everything was great!

And otherwise, I’ve just been eating a lot of normal, boring stuff like salads, pasta, etc.  I hope I haven’t made you too hungry!

  1. I’m totally obsessed with pumpkin (just not the spice part) – but then again I love it all year around when it’s fresh. Mmmm That restaurant looks amazing – vegan options galore!
