Food Fridays: Lamb, Chicken, & Okra

This week, I had my nice camera with me which makes for excellent food photos!

First, that lovely Lamb Roast we made on Sunday.  It was on clearance sale at the store so we picked it up and made it for us and my parents.  Simple enough, I just inserted some garlic into it and covered it in herb butter (store bought).  Then I just followed the directions on the package.  Delicious!


DSC_1799Second up was Lemon Pepper Chicken.  This was really easy!  I used some online recipes as guides but basically you mix your herbs and butter (or buy it) and cover the chicken with it.  Then squeeze a lemon over it and garnish with a lemon slice.  Bake until golden and cooked through.  I wish I had taken the skin off but it was delicious either way!DSC_1808

Just some fun pictures while making breakfast.  Butter in the pan, eggs cooking and my roasted tomatoes with eggs over easy. Yum!

This was supposed to be a recipe but came out very poorly.  Basically, healthy Fried Okra.  In the end, what worked best was lightly coating the okra in egg and then in Coconut Flour (I tried Almond Flour, bad idea).  I then pan fried them in Coconut Oil.  In the end, they came out great!


I have a recipe to post also but since this post has enough pictures, I will make it a separate post to auto-post next week while I’m away so be on the look out!  Also, the hotel has limited free wifi in the public areas so I can hopefully post some pictures and things while I enjoy my morning coffee next week!

Finally, check out what came in the mail yesterday!  Aren’t they cute?!

I can’t wait to hand some of these out!  I’ve been asked for them at expos before so it’s a good thing I finally got them.  I love the little chicken and eggs!  So cute!

  1. I’m jealous of both your pictures from this week and your food from this week. I’m so uninspired to write about my week because it really sucked…a lot! *lol* Need new recipes – stat! I’m so sad you’re going to be gone, but I can’t wait to see the pictures!! 🙂

  2. Those are darling! I need to put more calling cards in my wallet. My stylist is thinking about leaving her current place & handed hers to me — I looked at her and said, “I’m so sorry. I have them but none on me.” What’s the point in buying them if you don’t have them on you to hand out!? Silly me!

    I wanted to tell you that I dreamt we were in NORTHERN Africa last night. I’m not sure how I got there but I was having a time with my rusty French and turned around to see you! You told me that you had met Nelson Mandela. I’m not joking. My brain is so funny!

  3. Oh! what a nice idea for the fried okra.. I think I’ll give it a try this weekend because I need my okras for tonight’s curry 😛
