Goals & Paleo Foods

Quick update blog! I found a mistake in my tracking spreadsheet which was throwing off my goals chart (it looked like something was wrong to me and I wasn’t going to stop til I found it!). Anyway, it means I am WAY behind on all my goals. I can’t really catch up on some of them (because they are “do this every day” things) but I can try to keep the gap low. Here is my current chart.


Yesterday was pretty good though I got a major stomach ache midday. Then it stayed feeling off all day and came back again with a vengeance right before bed. Woke up this morning feeling bad too. Let’s hope it goes away today.

I’ve been eating some really good Paleo-friendly foods lately. First off, I made “candy bars”. Basically, mixed nuts, dates, and other add-ins covered in a thin layer of chocolate. Yum! I used up my peanuts (which aren’t Paleo) but they had to go somewhere. I shared the recipe on Spark Recipes.

 

I also made the most delicious dinner last night. At the grocery store this weekend, they had whole rotisserie chickens for $5 and I also found a turkey breast. I have been eating those for every meal so far and love it! No cooking! Last night, I wanted something a little different. I roasted some brussel sprouts in the oven with olive oil, salt, and pepper. I took some of the turkey meat and threw it in a pan on low with a dash of olive oil and some Pampered Chef chili lime seasoning. It was phenomenal!!

My running date got canceled for this morning. She ended up working a double yesterday and texted me that we should go Thursday instead so that’s the plan! You would think I would get up early anyway and work out? No, I slept in. Tonight, I need to do something! I want to go to the YMCA tomorrow night for Zumba and Body Pump too but who knows if I’ll have the energy for all that! We’ll see!

  1. that “candy bar” looks amazing!!! and I hope you feel better soon. I havenever been able tomake brussel sprouts and like them. Im afraid Im not doing it right

    1. They are tricky! I like them best baked at 350 for 15-20 minutes. You cut them in half and then drizzle them in olive oil and seasoning before putting them in the oven. They take some getting used to!
