
The weekend before last, I was feeling super sick with allergies. My husband was totally awesome though and did a bunch of food prep for me since I’m too busy during the week to cook!
I made hardboiled eggs earlier in the day. He cooked up salmon, steak, chicken, and sausages for protein choices. He also made steamed broccoli, rice, and fresh homemade pasta for sides. I have fresh, raw veggies in the fridge for more options. Now I can just grab a few things and make a meal! I thought I’d share what I came up with.
Meal 1 – Salmon and Broccoli over Pasta
I added a bit of grass fed butter for moisture and parmesan cheese for flavor.
Meal 2 – Chicken and Broccoli
This was my quick and easy Chinese Food! Chicken and broccoli over rice with a little low sodium soy sauce.
Meal 3 – Sausage, Broccoli, and Rice
This is one of the least glamorous meals. I wasn’t in the mood to pack lunch but having cooked things in the fridge made it so easy to throw something together!
Meal 4 – Chicken Burrito Bowl
I had a few minutes to prep so I got crazy with this one! Rice and chicken from the pre-made foods. Canned black beans, dice tomatoes, peppers, and onions, sliced avocado, and lime juice. Add a little hot sauce if you have it!
That was the most interesting stuff I came up with last week. Most of the time, I just pick a vegetable, carb, and protein and go! Rob did another great job prepping this week but I’m super busy and it will probably just be a regular combo of foods, no fluff! One day of meal prep just makes it so easy to eat healthy the rest of the week!
