Marathon Training

I had the best workout yesterday!  There was nothing special about it.  I just did some running intervals on the treadmill but I really enjoyed myself.  I think just changing it up really helped.  Lately its just been mileage runs and having something to think about during this run really helped!  I used my new notebook from my sister as my workout journal.  Its so much easier to keep track on paper sometimes!

Today’s workout is an “endurance” run according to the article I’m using as a guideline.  Basically, its time trials (fast mile, fast 5K, etc).  I haven’t decided which one I am going to do yet, probably the 5K.  I am waiting until noon or so when its warmer so I can run outside.

I finally made some Larabars last night!  The problem is that I book-marked some websites on my laptop but I have no internet at my apartment!  I remembered one article saying 8 dates for 1/2 cup cashews so I gave that a go.  Then I used my cell phone to look up the cherry pie Larabars and found another recipe.  I had to modify that one because it wasn’t sticky enough but in the end, it worked out great!

I’m also in love with my food processor!  At home, I have my immersion blender with an attachment but I didn’t have anything here so I picked this up at Target.  It was cheap at $20 and worked great!!!  (And its purple).  I tried mixing the ingredients by hand in the bowl after I chopped everything but it worked best to just throw it all back in the blender again.  I ended up making 9 mini-bars (about 50-60g each) and they are delicious!

Cashew Cookie Larabars (made 4 bars)
1/2 cup raw cashews
8 dates

Cherry Pie Larabars  (made 5 bars)
1/2 cup raw almonds
8 dates
1/4 cup dried cherries

I was bummed that I had to buy sweetened cherries but that was all the store had!  They still taste great!  I am only wondering now how long I can keep them in the fridge.  I guess I could freeze them too?  I definitely won’t eat all of these this week!

  1. From the ingredients, you’re dealing with ALL dried fruit/ nuts. This should keep w/o refrigeration BUT it’ll keep longer with it.

    Usually something that high in natural sugar is basically *preserved* by sugar (you can also preserve by salt). As an experiment, why don’t you keep one in your desk with the date written on it or taped onto the cling film? Obviously, if it gets hot, that will speed decomposition/ microbial growth.

    1. Ooo, and I was going to say: I’m going to try a date version cos I have a bunch left and I do NOT like them on their own. Mixing in with a bunch of nuts sounds great!

      1. I ate all of my dates plain before I could make the bars….they are my favorite fruit right now….I bring 3 to work with me in my lunch and it’s what I look forward to all day!!! Sad, isn’t it?

        1. That is too funny! I bought a giant box of dates at BJs so it would be hard for me to eat them all! And it’s ok Tiff because Larabars are my new candy bars. Ha!
