Zucchini Noodles

Yesterday, I had loads of energy!  I don’t know why but I’ll take it!  I drove down to school and set up camp in my office for a few hours until a stomach issue sent me packing.  Even though I ate completely Paleo, some foods still bothered me.  I’m probably also still recovering from Sunday when I had a few bad things.  It takes a while for you system to get back to normal.  Anyway, so I went to the comfort of m apartment and decided I had to be productive even though I felt sickies.  I made a simple to-do list:

I have this book of to-do lists where you only list you 2 highest priorities.  I got to working on both immediately.  I only ended up cleaning the kitchen but it is spotless now!  It took me a good 2 hours to finish between cleaning out cabinets, washing dishes, and putting things away.

I decided to try a new recipe last night for dinner.  Well, not really a recipe but an experiment.  I saw Zucchini Noodles in Practical Paleo and decided to give it a try.  She said something about steaming them for 3-5 minutes and I definitely over-cooked mine.  Oh well!

Here is what I did:

  1. Take 2 raw medium zucchini and peel them with a julienne peeler or a regular one if you want wide strips.  Peel down to the seeds and discard those.
  2. Place your zucchini noodles in a steamer basket and steam for about 3-5 minutes.  Don’t let them go clear like I did or they will be mush.

On top is just some cooked chicken, scallops, and mushrooms in store-bought marinara sauce.  You can top with any of your normal pasta toppings.  I though they were ok and easier to make than spaghetti squash but like I said, I overcooked them so they were mushy.  I’ll try again some other time!

I didn’t get much else done the rest of the day.  I did my 125 crunches and some squats and push ups.  I also read a bit more of Practical Paleo before bed.  I thought I would just skim it but there is some good stuff in this book!  It is completely different from the other Paleo books I’ve read and in a good way.  She has tips and tricks and natural remedies for all sorts of issues.  I don’t want to give it all away before the book review but its going to be a good one!  So glad I got it!  Now, off to school I go!

What uncommon way have you prepared vegetables before?

I like the zucchini noodles because 1) I love zucchini but 2) I’m tired of just eating them sautéed.  This kind of spiced things up in life!  As for other veggies – I’ve sliced brussel sprouts before instead of cooking them whole or just in half.  They cook much more evenly and are better bite-sized.  Loved it!  Just have to be careful when cutting them because they might roll.

  1. Funny about the zucchini noodles…Yesterday’s post by Civilized Caveman Cooking had a recipe using zucchini noodles, too! After he julienne them, he put them in a colander, salted them, got rid of the liquid, then sauteed them quickly. I need to give them a try…Glad you like your new book!!! 😉

  2. I scare people by eating turnips raw…I was raised doing it and it’s my favorite way to have them! I think most of what I eat is weird to people (meaning what I was raised eating and continue!). Hard to be specific, like ‘everything.’ A friend was over and watched me yank a chicken carcass out of a TRASH BAG (used for freezer storage) and continue to make stock from the bones, cartilage and such. ::shrugs:: Stock is normal! But apparently people are used to buying theirs.
