Weekly Eats

Good morning!  Nothing too exciting going on this morning.  I made pancakes for breakfast based on a Paleo recipe.  I haven’t quite perfected the single serving yet so no recipe but I am working on it!  Also, these suckers take forever to cook so by the time pancake #4 is done, pancake #1 is cold.  Hm…  They were pretty darn good though!  And hopefully that was enough food to give me a bit more energy than normal.

Speaking of which, I slept through my alarm clock.  And I know why!  I had pizza for dinner (I know, I know it was leftovers and I just can’t bear to throw things away).  But its all gone now and my goal this weekend is to behave.  I’m not saying I’m going to eat 100% Paleo or swear off ice cream.  I’m just going to behave: avoid “bad” foods if possible, eat small portions if I have “bad” stuff, drink lots of water.  For me, “bad” foods is anything that is obviously not healthy (sugar) or things that I do not digest well (wheat, rice, etc.).

TilapiaLunch was also delicious yesterday!  I threw 2 filets of Tilapia with some salsa and red peppers into a small glass pan and put it in my toaster over at 400 for 25 minutes.  (If you make it in the oven, I would say put it to 350, my thermostat on the toaster oven is off or just cooks differently).  This came out amazing!  You could add an extra side of veggies if you need it but I used 8 ounces of Tilapia so it came to about 265 calories for me!  It was a very light lunch, more like a snack (this was actually my second lunch). 

This weekend is going to be crazy.  I know its only Thursday but I have an appointment tomorrow morning so I am going back home tonight.  I still have to do work from home but it still feels like the weekend to me.  I will still try to blog tomorrow though!  I did leave you guys hanging twice last week.  Its just been so much work for school that there hasn’t been much interesting health and fitness stuff going on!  Until tomorrow!
