Healthy Holidays W1D3 Recap

Just a quick recap blog today.  I am super busy with homework.  I figured I should post it now instead of in the morning so it doesn’t eat up my work time (I work best in the AM).

Challenges for Today:  Log Food & Eat 5 Veggies

  • Breakfast: Garden Skillet with *broccoli, *mushrooms, *onions, *peppers, *tomatoes, and home fries. Coffee
  • Starbucks Americano with splash if sugar and half & half
  • Lunch: Taco salad (*romaine, *red peppers, *cauliflower rice, *salsa)
  • Snack:  Honey roasted cashews
  • Dinner: *Cauliflower rice, tilapia, black bean salsa, *tomatoes
  • Glass of wine

As you can see, I got plenty of veggies!  Rob and I tried a new place for breakfast and I was super excited to see the Garden Skillet on the menu to help me kick start my challenge for today!

On another note, I haven’t eaten enough today.  I’m only at about 1100 calories.  I also was a lazy bum and have only walked a little over 2000 steps today.  I usually make it a rule though to eat at least 1400 (less and you start to lose muscle mass) but I just wasn’t hungry today and am not looking forward to chocking down calories.  Let’s just hope my guesstimates were off and that is why its so low… But I might have a spoonful of almond butter in a bit just in case…

Reminder: Tomorrow’s challenge is High Intensity Interval Training.  I don’t have any clue how I am supposed to do this.  I mean, I cannot use my left leg at all.  Even too much walking and my doctor moans and groans.  I was thinking about perhaps sitting in chair and “marching” for the recovery parts and shadow boxing for the intense parts?  Any other ideas?

How do you deal (mentally and/or physically) with injuries?

I do NOT like being injured.  Sure, I’m only in this boot for 3 weeks but this ankle has been cramping my style for 6-7 months (partially my fault for not getting it looked at right away even though I tried letting it rest – which is what it needed but who knew every day walking was hurting it!).  I am seriously starting to go crazy from the lack of cardio though.  And its killing me knowing I have to go back into it slowly.  I just want to RUN!  (Just to be safe, I’ll be doing C25k from scratch again after this boot is off – so don’t worry about me overdoing it!)  7 more days…
